I spend a lot of time talking about November baked goods; I share what they taste like, whether the texture is soft and tender, crispy and flaky, or silky and smooth. The joy of a home filled with the scent of autumn, filled with the coziest of vibes on those late fall November days when the trees are almost entirely free of leaves (what some Vermonters call "stick season"), and the air is cool and damp.

What are the flavors of autumn baking

Once fall rolls around, the longing for nostalgic autumn baking kicks inโhard! What are the flavors at the heart of this delicious season?
I would say that cinnamon is at the top of the list. Just one whiff of cinnamon evokes that feeling of being in your grandma's kitchen as she pulls a hot pan of cinnamon rolls from the oven. Or of being in your favorite local cafe and catching the scent as baristas sprinkle cinnamon over coffee and lattes. It's a warming, snuggly scent and flavor.
Other flavors of autumn baking that we love are the other spices that twarm us from the inside out: nutmeg, cardamom, allspice, and clove. Along with cinnamon, you'll find them in simple cozy bakes like banana bread, ginger cookies, snickerdoodles, apple cake, and pumpkin bread.
