For the peach nectar:
- 2 cups fresh or frozen peach slices (about 9-10 ounces)
- 1 cup water
- ⅔ cup granulated sugar
- 2 teaspoons fresh lemon juice
For the margarita mixture:
- ⅔ cup peach nectar
- 4 ounces tequila Silver or blanco
- 1 ounce triple Sec orange liqueur
For the rims:
- ¼ cup orange juice
- ¼ cup granulated sugar (for the rims)
Ice and garnishes
- Cubed ice for the shaker
- Cubed or cocktail ice for the glasses
- Optional garnishes: fresh peach slices, edible flowers, orange slices, blueberries
Make the peach nectar:
Add the peaches to a medium saucepan along with the water, ⅔-cup of granulated sugar, and the lemon juice. Bring the mixture to a simmer over medium heat.
Reduce the heat slightly and simmer the mixture for another 8-9 minutes, until the peach slices are soft.
Remove the pan from the heat. Transfer the mixture to a blender, and puree it until the nectar is completely smooth. Refrigerate the peach nectar for about an hour until it's completely chilled.
Tip: To chill the peach nectar more quickly, pour it into a shallow metal baking dish or bowl, then refrigerate it. The metal pan will speed up the process.
Make the drink mixture:
Pour ⅔ cup of the chilled peach nectar, the tequila, and the triple Sec into a cocktail shaker along with ice. Cover and shake everything until the mixture is very cold, with frost appearing on the outside.
Coat the rims:
Pour the orange juice into a shallow dish that's wide enough to dip the glasses. Pour the ¼ cup of sugar into another shallow dish.
Dip the rims of the glasses first in the orange juice, then dip the rims lightly into the sugar to coat the rims.
Assemble the drinks:
Place ice cubes in each glass, carefully, so as not to disturb the rims. Strain the margarita mixture into the glasses, dividing it equally between them.
Add garnishes to the glasses if you like—a peach slice on each rim, or edible flowers floating in the drink. You can also put an orange slice on the rims, or add a cocktail pick with blueberries to each glass. Enjoy the drinks right away!
- You'll have some peach nectar left over. Use it to make another round of drinks, or enjoy it stirred with seltzer, other juices, or blended into a milkshake. The nectar can be stored in a covered container in the fridge for up to two weeks.
- You can make this drink with traditional margarita glasses, stemmed cocktail glasses, or short rocks glasses. Small mason jars are another option that I really like—they're inexpensive, versatile, and make a prettily rustic cocktail.
- Consider stashing your glasses in the freezer ahead of time to get them really cold for your drinks.
