Oven Baked Potato Slices with Bacon Jam

Sweet-salty bacon jam atop crisp and thin slices of roasted potato. Oven Baked Potato Slices are a delicious, savory appetizer or fancy snack.

Ingredients

  • 2 large russet potatoes
  • 2 tablespoons vegetable oil (use a high smoke point oil like avocado or canola)
  • 2 teaspoons salt, divided
  • 1 teaspoon black pepper
  • 1¼ cups bacon Jam, warmed
  • 2 ounces Parmesan cheese

Instructions

Prepare the potatoes:

  • Preheat the oven to 400° F. Line a large baking sheet with parchment paper. Line a cooling rack with paper towels.
  • Scrub and wash the 2 large russet potatoes well, then pat them dry. Slice the potatoes into ⅛-inch thick slices with a sharp kitchen knife or a mandolin.
  • Rinse the potato slices under cold water to remove the excess starch. Spread the slices out on a clean dish towel; pat the surfaces dry.
  • Add the potato slices and the 2 tablespoons vegetable oil to a large bowl. Toss the potato slices gently to coat them with oil.
  • Lay the slices out on the prepared baking sheet so that they're touching but not overlapping. Sprinkle 1 teaspoon of the salt and the 1 teaspoon black pepper over the potatoes.

Roast:

  • Roast the potatoes until the slices are browned and crispy, about 40 minutes—use tongs midway through the baking to flip the slices over.
  • Once they're crispy, transfer the slices to a paper towel lined cooling rack. Blot off the excess oil from the surface of the potato slices.

Assemble the bites:

  • Once they're cool enough to handle, arrange the roasted potato slices flat on a serving tray.
  • Sprinkle the remaining teaspoon of salt over the potatoes. For the 1¼ cups bacon Jam, warmedop each potato slice with about 2 teaspoons of the jam
  • Use a grater to shave 2 ounces Parmesan cheese over the tops of the bacon jam on each potato slice. They're ready to serve!
  • Makes about 30 bites, depending on the thickness of slices.
