Chocolate Peanut Butter No Bake Cookies

- 12 ounces semi-sweet chocolate chips (2 cups)
- 2 tablespoons vegetable shortening
- 3 tablespoons creamy peanut butter
- ¼ teaspoon salt
- 2 cups granola cereal with almonds & raisins (I use Quaker brand)
Melt the chocolate:
Bring water to a boil in a medium saucepan or the bottom of a double-boiler. Line a large baking sheet with parchment paper. Once it boils, reduce the heat under the water to keep it at just a simmer.
Place the chocolate chips and shortening into the top of the double boiler, or into a large, heatproof bowl set on top of the saucepan of boiling water. Stir the chocolate until it is melted and smooth.

Place tablespoon-sized scoops of the mixture on the prepared baking sheet. Allow the no bake cookies to set at room temperature until the chocolate is set—2 to 3 hours.
Store the cooled, set no bake cookies between layers of wax paper in a tightly sealed container.
The chocolate peanut butter no bake cookies can be stored in a cool, room-temperature spot for 2 to 3 days.
Makes about 28 cookies.
